For completeness:
At the moment you delete a file it's possible to get it back; it becomes less possible with time, but with each second that passes, it gets harder to do.
Shut down the server immediately.
Remove the drive.
Mount the drive on a workbench read-only, log on with a rescue system. Mount a new drive to make a copy; Mount the original drive read only.
Make a bit-for-bit copy.
Send the copy in to a company specializing in restoring data (it's a combination of an art and a science; I don't think it's something you can try yourself unless you've already experimented with doing it) and tell them what file(s) you need restored.
Put the original drive back in the server, and start the server again.
You may or may not ever get the files back. It will mean some downtime (perhaps hours) while you're copying the drive), and it will cost a lot.
So unless you stand to lose a lawsuit costing you thousands of dollars and heavily impacting your ability to stay in business, it's probably better to fall back on your advertised terms of service, which hopefully says you're not responsible if you lose data.
