Can we take backups of emails only?

Hi

I am migrating one of our servers (SERVER1) to a new one (SERVER2). I took full system backup from the SERVER1 and successfully restored on SERVER2 . In between during this entire process, the users might have received new mails on SERVER1. Before making the SERVER2 live, I need to take only the mails from SERVER1 and put on SERVER2. Can I take backups of emails only from all users on SERVER1 so that I can restore/overwrite them on SERVER2?

you have this option in Admin Level > Admin Backup/Transfer
Check only Email accounts, data and settings.

But i dont know about you can restore on server2 when the user allready exists
