Change default database collation for all users

Hello!

There is any command that change the database collection from latin1_swedish_ci to utf8_general_ci?

I've installed a fresh copy of CentOS with DirectAdmin and I restored all accounts backup before I changed the collection_server and character_set_server and now the default characters encoding for all imported database's is latin1_swedish_ci instead of utf8_general_ci.

So there is any command that can fix my issue?
