Differences in DA backup systems

I'm about to upgrade my 1.39.3 system but I think I should probably do a backup first

What's the difference between Admin Tools > System Backup and Admin Tools > Admin Backup/Transfer? Which should I use if I want to backup *everything* DA?

My goal is to do a main backup and then do incremental backups until the system is up to date. Is that doable?

The Admin Reseller Backup/Transfer backups only users, while the System Backup[/] backs up all server configuration files, etc. But the latter does not have a restore process; you'd have to restore anything you need to restore by hand.
