Hello, I am new to DirectAdmin and about to start installing. I'm moving from a FreeBSD server with qmail/vpopmail/courier to a server with DA, and I wanted to know what would best resemble that mail?

Personally, I primarily use IMAP for my email, and my clients use webmail, mostly.

Is dovecot stable enough to use in production? Are there better options to use?

Even though Dovecot is labeled beta, it is quite stable. I think this server would more closely match your old setting. Plus, having Dovecot manage both POP3 and IMAP helps prevent some of the problems associated with two different servers, where POP3 would redownload all messages viewed in IMAP.
