I don't know How to change MySQL "default charset" from UTF-8 to Latin1?

FreeBSD 6.0
Apache:1.3
DirectAdmin: v1.29
MySQL: 5.0
and phpmyadmin: 2.10

yhm i'am afraid it's impossible, a long time ago i try to change charset to latin2 and nothing.
