Warnings: Totally untried. Will definitely break DirectAdmin, perhaps irreparably.
You can use any MTA you want instead of exim. You'd have to remove exim and install your new MTA.
On most OS distributions Exim is installed as a package and can be removed using your distribution's package manager.
HOWEVER ...
Even if you install another MTA as a deamon, DirectAdmin will not (and probably cannot be made to) be able to use it for incoming mail. You should still install another MTA to be able to send outgoing email off the server, but you'll have to handle your incoming email on a separate server, completely independent of DirectAdmin.
And you'll have to make certain that DirectAdmin lists NO domains in the /etc/virtual/domains directory.
You may get lots of errors from DirectAdmin.
