Why does it matter?
As long as the A record for the MX is correct it shouldn't matter.

Originally DA used example.com as the target of the MX recors.
Since mail.example.com is more standard they may have switched.
Generally in a webhosting environment either will work.
In a more complex environment, where example.com might indicate only the domain, and there might be specific servers running specific services, and even multiple mailservers, pointing MX to the domain would be quite simplistic.
