New Server - Need help with setup and DA install

I setup a co-located server last year and had DA installed on it. My plan was to move my existing sites currently on shared hosts to my new server but in the testing I did I was never satisfied with the performance, mainly MySQL performance. I tried various tweaks but the queries the forum software I am using always ends up creating temp tables to disk. It’s been a year and that server is just doing email for me and a couple of people right now. Kind of a waste really.

Today
I bought a beefier machine off ebay to replace my existing one. I know I went overboard and the machine is overkill for what I need but I wasn’t talking any chances. Any way I’m looking for some one that can help me with the server setup and DA setup, tweaks, hardening, etc to make sure I get everything running smoothly and securely. Even it someone could point me to guides on the best way to setup a server that would be great. I was planning on installing CentOS 64bit on it and setting up a raid 1 array for the os and apps and a raid 10 array for the database and user files. I'm not sure how well that will work with DA though? I’m even willing to pay a bit for someone to help me out. Here are the specs of the new machine:

johannes, I edited your post because your list was non-exhaustive; there are some admins who read this forum who will respond privately to this post if they feel they can do the work. Recommendations based on personal experience, with supporting information, are welcome, but just a non-exhaustive list without individual reasons is probably counter-productive.
