possible only hosting, not dns, not email service

I have some customers that want to keep the control of their dns and email servers, so only contract web hosting, how do I create such account?

DNS is easy; you can delete the entire DNS zone for the domain.

Email... that's a bit harder, but you should be able to find multiple threads on these forums where it's already been discussed.
