Recover the deleted emails??

Log into your email account, and use something like Roundcube (web based from your admin control panel) or Thunderbird/Outlook etc.. Navigate to the trash folder and select the mail you want to keep and move it to your inbox. If using a software client make sure you login as IMAP, not POP.
And backing up from the server? That's up to you on how much you backup and your retention policies. I've got backups of mail nearly 20 years old. Probably never need it, but I've got it just in case
