I noticed that a couple of emails that are being sent out from my server are stuck in the queue and they are being deferred. I am pretty sure this is referring to greylisting, but I don't understand why the emails aren't being delivered even after 24+ hours. Any thoughts?

then it's got nothing to do with greylisting. You can read your exim mainlog to see what the recipient server is reporting when DirectAdmin tries to send one of those emails from the queue.
