How I can setup just a DNS server on DirectAdmin ?

I did full instalation and right now I've got lots of stuff that I don't need like mysql, postfix, ftp etc. How I can remove it, to have just a dns server + directadmin web panel ?

That's a bit difficult. You want to use DA only for DNS?
You might want to have a look at PowerDNS for just running a DNS server.

try and disable them from starting at boot, and from service monitoring in directadmin.

DirectAdmin doesn't use postfix or even monitor postfix, it uses exim.
To disable DirectAdmin from monitoring services, see the file /usr/local/directadmin/data/admin/services.status
