I hired a Contabo VPS with these settings:
8 vCPU cores | 24GB RAM
300GB NVMe or 1.2TB SSD
2 snapshots | 32 TB traffic*
Unlimited entry

It has about 55 sites, would it be too much for server configuration?

I'm just starting out, if you can help me with what to do

sadly contabo is not a good provider, the overselling is too much.

"66% STEAL", it means your VPS needs to use CPU Power that is being used by others VPSs on the same Node.

so you are paying to not use the resources they sold to you.

that does happens on many providers, so check reviews before deciding to where you are moving

I found my personal best one here https://php-friends.de/vserver-ssd (1-3 st max at peaktimes), and other good is from hetzner, they just came out with new offers https://www.hetzner.com/cloud/
