Still receiving mail to non-existent addresses

I have numerous domains on my dedicated server (all mine) and have checked the radio button to "Ignore and drop" mail sent to non-existent addresses. But I am still getting tons of spam sent to a huge variety of addresses that do not exist on these domains. Anyone know why?
 
Probably because the recipient address in the smtp handshake isn't the same as the "To" address in the email. There's no requirement they be the same, and spammers often do this.

Without seeing the entire email, with all the headers intact, there's no way to be more specific. If you want to attach the entire email with all headers intact, feel free to do so, but as an attachment, since it won't help if you obfuscate anything.

Thanks for your reply Jeff. I have checked this previously and while there are a few messages like that the vast majority are not. They have actually been sent to the non-existent address. The recipient and To fields are the same.
 
Then check the logfiles to see how they're being delivered.

What version of the exim.conf file are you using (you can post the first five lines if you're not sure)?

I wrote all the recent versions, and I can authoritatively say that unless they've been changed they refuse mail for nonexistent recipients before they do any other checks at all.
