Simple as clicking the box next to "unlimited". As for server load, it will depend on what they do with the subdomains. One of our clients has over 1,000 subdomains but he consistently stays inside his plan resources, so I wouldn't worry about that as much the pain it is to browse through DNS zone files, lol.
