Is it possible if i were to put a second hard drive in my server to have the accounts just 'spill' over onto the second hard drive when the first fills up?

Yes it is possible. Once you've allocated the 1st hard drive up you can reconfigure the operating system to start creating future user accounts on the 2nd HD.

There are also many other possible solutions such as raid.
 
The datacenter employees told me my drive would need to be formatted to use raid in that manner.
 
yeah you would have to format, although if you got a 3rd hard drive to use temporarily it wouldn't be to hard a conversion. But once you've allocated all of your 1st Hard Drives capactiy, you can then have modify the directadmin.conf file to use a different partition, which would be on the 2nd hard drive.
