Where are the Sent, Draft & Trash mails stored?

They should be located in /home/username/mail
where username is replaced with a real username.

What is /home/username/imap then?

/home/username/mail is only one single file, which I presume is the POP3 mail spool...?

From what I can tell mail contains those folders for the main email account (username/password).

There is also a file in /mail/exampledomain.com/
that corresponds to additional email addresses you may have created.(username@domain/password) The actual mailboxes for those domains can be found in the imap/exampledomain.com/ directory.
