That it is not a live information, it should update once a day (during the night), if I am not mistaken clicking on "Details" will give you the option to update it manually.

Please consider that the per-domain disk space is probably taken by the command du -sh /home/USER/domains/DOMAIN while the user used space is taken from the system quota, which means it include all space used from a single user even in different partition.
Even backups, so if you have backups under the admin user, those would still be owned by the user and accounted on his space.
Please also ensure to check the /home/USER folder, there may also be somethieng there

You don't seem to have quotas enabled on the system:
/dev/mapper/centos-root on / type xfs (rw,relatime,attr2,inode64,noquota)
