Answer for MX problem
Here's the answer, for what it's worth, for the MX problem:
First of all, all MTAs should try the A record if there's no MX record, so no MX record won't work.
Second of all, no one is nice enough to want to fill up their own server so you don't have to fill up yours.
If it's just spam, then setting up spamblocker for the domain should get rid of most of the email. Spamblocker is not described anywhere, but it is included and it does work. Search these forums and then ask specifically about it.
If you're going to use SpamBlocker don't forget to the read the comments at the top of your /etc/exim.conf file as you really should set up the site the bounced mail will refer folk to, just in case you ever get any false positives.
Another thing you can do, though a lot of 'net purists will hate you for it, is to create an a record for say "example" (without the quotes), using an address of 127.0.0.1, and then setting the MX record to "example" (also without the quotes.
This will have the very uncomortable effect of making any server trying to send email to the domain just hit themselves.
However even this won't completely work, as many spammers now send to A records as well as to MX records.
