In DirectAdmin, there are many places that IPs are collected from users, access logs and other logs, visitor stats etc

I want to avoid any ip logs until I can get their consent so I can meet GDPR requirements.

Is this really possible? Does that make sense? Does GDPR need that much?

No that does not really make sense, isn't possible either.
Logging ip addresses on servers is a basic need, just like other things like the browser they are using, is logged to, their email address also on registration.

It's up to you to put this in your privacy policie or terms and conditions you put your GDPR info in.
It's not possible to disable ip logging from everywhere before getting consent. It's not required to do so either because it's a technical need.

You do have to inform the customer about it, but as said, that is up to you do do this in your Terms and Conditions or Privacy Policy.
Just be sure your customers agree to that before they can acquire an account and/or have this visible on your site.
