vm-pop3d had a nice logging system that would not only tell me who logged in but also how many emails they download, the email message size, and how many emails were deleted.

Dovecot cannot seem to do that or at least I cannot find the setting or see it in the log.
 
You can see who logs in and when in your /var/log/maillog. I don't know about the rest.

I see it now but it only shows for pop3

It does not show for IMAP.

Its helpful for diagnosing problems. I had a reseller tell me mail was disappearing from his client's email account. After carefully searching the log for what I used to be able to see very clearly I was able to show him that his client was logging in with a pop3 client and it was probably automatically deleting the email off the server.

But with imap I cannot seem to figure out what is being done with the email. I have no way of knowing if email was deleted or simply moved to another folder.

It appears that everything you do with imap simply logs as a login and a logout. I'd recommend asking on a Dovecot related forum or list for information on if or how Dovecot can be made to show more detail.
