Encrypted emails

Outgoing Email not encrypting

Alright I'm not sure if this is a Dovecot or an Exim Problem, but none of my outgoing/sent email is encrypted. I've got Let's Encrypt running and installed properly. I've run every command zEitEr has posted in this thread and everything has returned with a response. The only thing I can't do is...

Thanks Billy, I saw that earlier but it appeared he was meaning just connecting to the server to send and receive mail. I should have read closer as he is looking for the same as me. I'll look into it but it does look like a steep learning curve. I was hoping there was some kind of walkthrough.
 
p.s. Is it possible to encrypt incoming mails even if they are not encrypted by the user when sending? Maybe the servers talking to each other can do it for the user and thus ensure all mail is encrypted? I'm fairly sure it's possible as I came across a service that offers it when googling earlier today (can't remember it now as I am looking for a self-hosted solution).
