Thanks for the pointer . . . it got me thinking, and I've solved it. Was actually my host! I use my host for POP *and* SMTP, if I use webmail, or another host the mail comes through in a second as expected.
My host has no clue as to why this is happening, although they do admit it is happening which is something I guess

PS - We're launching our hosting arm very shortly and are HUGELY excited to be using directadmin - we've just come away from servers with Plesk who said that it (plesk7) didn't even support the latest version of PHP and to upgrade they would have to bill us!!
