How do I move my email?

I have the following situation:

I am moving my site from one host to another. I uploaded the new site to my new host and changed the NS records with my old host. The change has already taken place and it was seamless and perfect. But my emails from that domain still get routed through my old host. How do i change that? Does this involve changing the mX records? if so I am at a loss as to what I need to change them to.

Forgot to mention. My new host used directadmin while my old host has a different control panel (not sure which).

You will need to create an A record that points to the ip address of your new hosting and then point the mx record to that A record. Directadmin does all if this for you if you just point your dns to the nameservers of the new hosting provider. If it is not working you didnt wait long enough for dns to propagate yet.

Example:

mail.mydomain.com. IN A 123.456.789
mydomain.com. IN MX 10 mail.mydomain.com.

If you still have issues you should list your domain here and people can lookup your dns records and tell you why its not working.

Ah ok. Could it be that the website ns records are updated before the email ones? Since the site is already viewable on the new server but emails still get delivered to the old one? I must say the site was very quick (3 hours) so perhaps I just need to wait 24 hours before I get worried. lol.

Ok, I waited 48 hours but still the emails get delivered to the old server so I am sure I am missing the point.

I am posting a screenshot (hope that is allowed here?) to show the settings at the OLD host.
the new host uses mail.xxxxx.nl as mail server.
The website is already being shown on the new server, it is just the emails that don't get delivered there (I check by logging into the webmail of both hosts and mail collects in the old host webmail).

Now I will do as told in earlier reply by creating a mail.xxxxx.nl with an mx record, but will I also need to change the pop3.xxxxxx.nl?

You've not given us the information we need to help you. Please look here (ntlworld.com) for more information.

Hiding your domain isnt going to help you any...plus I see no mx records in that screenshot.
