I'm running a VPS sever (debian) with DA. The hostname is set to ds.xx.com (under the Server Settings section).
There are multiple domains running on that server.
is is safe to change it to ds.yy.com (where yy is the name of one of the domains pointing ot this server) or better ro change it to ds.xx.contaboserver.net (like contabo) withouth impacting the current setup?

You can set your hostname to whatever you want. Just remember, if you want good IP reputation for mail delivery, and also the TLS certificate for the server, the hostname must resolve in DNS.

Additionally the rDNS/PTR record must be correct too.

Personally I wouldn't change something which works fine unless it's really necessary, but that's me. :)
I agree. Good thing with Contabo (from experience) is that it's very easy to set the rDNS via their control panel. Some providers make it super simple and others, very difficult like my ISP here in UK. I pay extra for a static IP and they refuse to setup rDNS for me, but that's a whole other story 🤣
